Sunday Breakfast
Papa’s whole wheat banana pancakes are always a favorite with everyone. They are hearty and flavorful but sweet and fluffy. Served with whipped cream, butter, and real maple syrup, they make for a delicious weekend breakfast.
Like many of our established recipes, the following has been considerably adapted from a cookbook. Many homemade, whole-wheat foods often lack the same lightness as their store-bought or ‘white’ counterparts, but Papa has patiently and diligently perfected the measurements and techniques until fluffy pancakes are turned out (nearly) every time.

whole wheat banana pancakes
2 cups milk
3 eggs
1/2 teaspoon salt
2 cups whole wheat flour
1 1/2 tablespoon brown sugar
1 1/2 teaspoon vanilla extract
1/4 teaspoon lemon juice
3/4 cup chopped ripe bananas (about 1 1/2 bananas)
3/4 cup chopped walnuts (optional)
2 tablespoons baking powder
Beat milk, eggs, and salt in bowl. Add remaining ingredients and mix well. Baking powder should be added last so that its rising properties are not spent before you begin cooking the pancakes. (Papa also suggests mixing constantly as you add the ingredients, since this seems to improve the ‘lightness’ of the final product.)
Pour a small amount of batter onto a greased preheated griddle (375 degrees F). Cook until brown on both sides.
Papa’s technique for perfect cooking is this: after pouring the batter on the griddle, watch as bubbles form on the topside of the batter. When all of the bubble have broken, it is time to flip the pancakes. Cook the other side until it is an even golden-brown.

This morning's pancakes were so good
My folks refused all other food.
The other courses went to waste
Before the pancakes perfect taste.
Tom poured the maple syrup thick,
And with appreciative lick
So scraped and tarried at his plate,
The school-bell rang and he was late.
The family cleared a mammoth platter—
I made a second batch of batter.
Each pancake was ambrosial stuff—
It seemed they could not get enough.
The most delightful breakfast feat
I am unlikely to repeat.
And lest I be too much on trial,
I shan't serve pancakes for a while!
