(An Occasional) Breakfast
It needn’t be a birthday or a holiday for you to serve this festive ensemble. Every day should be a celebration, and what better way to begin a celebration than with a delicious, yet simple breakfast? With just the perfect balance of sweetness and lightness, this is a certain triumph for the home-keeper.
chocolate french toast
This simple recipes does not include measurements because it is so easy to put together and adapt for different tastes and numbers. I've tried my best to include some approximate measurements for the less improvisational chef.
slices of bread (a conventional loaf)
eggs (9-12 eggs)
milk (1-2 cups)
spices to taste: cinnamon, nutmeg, allspice, cloves
whipping cream (2 cups)
semi-sweet chocolate (1 cup)
strawberries or raspberries
confectioners sugar
Heat a griddle or skillet and brush lightly with butter. Whisk together the eggs, milk, and spices. The mixture should be pale yellow with brown speckles. Dip the bread into the egg and place on griddle. Cook until browned, then flip over and brown the other side. Keep warm in a 150 degrees oven, until ready to serve.
Beat the whipping cream until stiff. Prepare the fruit and melt the chocolate.
To serve, spread each slice of french toast with a thin layer of chocolate. Stack the desired amount of slices on a plate. Sprinkle lightly with confectioners sugar (a fine-mesh sieve works very well) and garnish with fruit. Serve alongside a generous dollop of the whipped cream.
This is the traditional breakfast for Mama's birthday. It is a much anticipated event, and, as you might guess, we have caught some timeless photographs of the young ones after the feast. The only thing sweeter than chocolate is a chocolate smile!
